When I’m hankering for a sweet treat on the weekend, these insanely scrumdiddlyumptious double choc peanut butter cookies are my go-to sugar & chocolate fix treat!
(CONFESSION!!! I had to use a stock photo of chocolate cookies. Unfortunately, my batch didn’t last long enough in my household for me to snap a quick pic. D’oh!!)
These little beauties have NO cane sugar, are full of nutrients, take just a couple of minutes to make, and use only 6 ingredients – many of which are pantry staples – and one special ingredient which I’m obsessed with: Maever’s All Natural Cacao & Peanut Butter Spread.
It contains only crushed peanuts and raw cacao powder and you can buy it from the health food aisle at Coles. Good and good for you! I’m so in love. (#notsponsored)
These little choc peanut butter cookies are still a “sometimes food”, although they certainly are a fantastic, much healthier alternative to chocolate biscuits and basically tick several craving boxes at once.
Plus, cacao is chocolate’s rawest and most pure form, so these biscuits will satisfy even the strongest chocolate craving. But enough of my raving on about them – without further ado, here is the recipe:-
Healthy Double Choc Peanut Butter Cookies
💕 1.5 cups Maever’s All Natural Cacao & Peanut Butter Spread
💕 1/2 cup honey
💕 2 tsp vanilla essence
💕 2 eggs at room temperature
💕 1/2 tsp bicarb soda
💕 3-6 squares of 85% Dark Chocolate (use gluten free if you are sensitive)
How to make it
💕 Dab a tablespoon full of mixture onto a cookie sheet pre-greased with cooking spray. Repeat with whole mixture, keeping spaced 2 inches apart on cookie sheet.
💕 Bake 10-15 minutes, depending on your oven. Mine needed about 14 minutes. They will look a little underdone when you first take them out but don’t despair! This is normal. Let them cool on the tray for 5 minutes, where they will continue to cook and solidify, then turn them out onto a wire rack for a further 5 minutes. If you want to take a photo of your creation, now is the time, because once they’re on a plate they’re as good as gone.
💕 Serve and enjoy. Note that these have less of a “cookie” texture and more of a “brownie” texture, with a crumbly outside and a soft, gooey fudge centre. Nom nom nom!
